I’ve recently started eating quinoa due to the fact I’m slowly trying to adopt a full plant based diet. In light of this Pinterest has been my best friend and has given me lots of inspiration of how to cook quinoa, and one way is quinoa porridge.
It’s really easy to make but it’s not the quickest so I tend to make it on the weekend.
- 3/4 cup of quinoa
- 2 cups of almond milk
Rinse the quinoa and brown off in saucepan for a few minutes. Keep stirring so it doesn’t burn.
Once browned off, add cinnamon and nutmeg to your own taste
Add the almond milk. It may seem like a lot but it will boil down which achieves the porridge consistency.
Once the almond milk boils, turn down to a low heat and put on the lid of the saucepan until the quinoa is your desired consistency. This may take up to 45 minutes.
Serve! And add any toppings. My favourite is jam!
I find that this recipe makes two batches so I put the other half in a container and have it the next morning.
